Cooking with Microgreens

Microgreens is known as superfood. The health benefit is 40 times that of a fully matured vegetable plant. Microgreens is not just for garnishing food but also is used in sandwitches, soups and salads. It is also used in savory and sweet dishes and tops over a fancy drink.

They're great blended into smoothies and juices as well. Wheatgrass and broccoli microgreens are especially popular for juicing, and they're a healthy way to start off your day. Try them on top of pizzas, soups, curries, omelets, stir fries, pasta, and other hot dishes.

Combine a few types of microgreens together like arugula, pea shoots, sunflowers, and beets and you have a colorful and tasty salad that's full of nutrition all on its own!

Microgreens Recipe idea:

Avacado toast with microgreens: add sprinkle of microgreens for added nutrition to your morning toast with avacadoes.

Pizza with veggies and arugula microgreens: sprinkle microgreens 10 min before taking out of oven for a bold, mustardy, aromatic taste of arugula.

Mushroom Cheese Burger with microgreens: add microgreens after you put the lettuce, meat, onion and tomato for a rich flavor.

Pasta with microgreens pesto sauce: in a blender toss microgreens salad mix, pea shoots, olive oil, pine nuts or walnuts, lemon juice, garlic and parmesan cheese and blend till smooth. Pour it over pasta or over bruchetta.

Roasted brussels sprouts and squash with microgreens: add microgreens to roasted vegetables with lemon juice, olive oil, walnuts, olives, cranberry and feta cheese.

Salsa or Guacamole microgreens: Take a blender and coarsely mix microgreens, avacado, salt, olive oil, garlic and lemon juice for a great taste for dipping and in tacos.

Omelette with Avacado and microgreens: You can put microgreens on the top as a garnish or you can chop it up and put it on the egg mixture with other ingredients.

Roasted cauliflower microgreen soup: roasted cauliflower off the oven then put it in the blender with roasted cumin, microgreens, cream and butter and add parsley to garnish.

Microgreens smoothies: add a green zing to your morning routine. Add 1 cup of baby spinach, few cut up green apples, squeeze 1 tbsp of lemon, microgreens, grated ginger, tumeric powder/grated 1/2 teaspoon, honey 1 tsp and coconut water.

Egg or Tuna salad sandwitch with microgreens: mix chopped up microgreens along with chopped up celery, chopped up red onions, dijon mustard, chopped up pickles, salt, black pepper, paprika and mayo. Put it over warm toasted rustic/oilive bread and enjoy.
