Summer Salad
Ingredients:
Half of Cabbage, thinly sliced
1 Carrot thinly sliced
5 cherry tomatoes cut in half
2 Radishes, thinly sliced
Celery 1 stalk
1/2 of red onion thinly sliced
1 avacado sliced in wedges
1 orange slices in wedges
Peanuts or other nuts handful
frozen mangoes few pieces
Optional add shrimp
Olive oil 2 tbsp
Salt 1/2 tea spoon
Honey 1 teaspoon
Balsamic vinegar 2 tbsp
Garlic 1.5 tea spoon
Black pepper freshly grind 1/2 tea spoon
Lemon squeezed 1 tbsp
Herb mix 2 tbsp finely chopped
Optional add spinach or romaine lettuce
Description:
Cut up all the salad base ingredients and mix it in a bowl. Mix balsamic vinegar, salt, chopped garlic, honey and olive oil for dressing. Pour over salad. Add herb mix and toss. Chill before serving for a refreshing taste.
